    Description

Most milk produced in the UK is bought by dairies (registered ‘milk purchasers’) for processing. Defra runs a monthly survey in England and Wales to collect information on the volume, value and protein content of milk purchased from farms. Similar surveys are run in Scotland and Northern Ireland. Additional information is collected by the Rural Payments Agency (RPA) on the protein and butterfat content of the milk. The UK average farm-gate milk price, protein content and butterfat content is then calculated.

    User Engagement

Data from the milk production and composition statistics are an invaluable evidence base for policy makers, academics and researchers. The data is also heavily relied upon by the UK dairy sector, as well as the AHDB. The milk production and composition data is used to understand the current state of the UK dairy sector, predict supply shortages and forecast future milk prices.

As part of our ongoing commitment to compliance with the https://code.statisticsauthority.gov.uk/" class="govuk-link">Code of Practice for Official Statistics we wish to strengthen our engagement with users of milk production and composition data and better understand the use made of them and the types of decisions that they inform. Description

The statistical data generated through the administration of the Federal milk order program is recognized widely as one of the benefits of this program. These data provide comprehensive and accurate information on milk supplies, utilization, and sales, as well as class prices established under the orders and prices paid to dairy farmers (producers). The sources of this data are monthly reports of receipts and utilization, producer payroll reports, and reports of nonpool handlers filed by milk processors (handlers) subject to the provisions of the various milk orders. The local market administrator (MA) uses these reports to determine pool obligations under the order and to verify proper payments to producers. Auditors employed by the MA review handler records to assure the accuracy of reported information. Reporting errors are corrected; if necessary, pool obligations are revised. After the pool obligations have been determined the local market administrator summarizes the individual handler reports and submits a series of order summary reports to the Market Information Branch (MIB) in Dairy Programs. The MIB summarizes the individual order data and disseminates this information via monthly, bimonthly, and annual releases or publications. Since milk marketing order statistics are based on reports filed by the population of possible reporting firms and not a sample, these statistics are comprehensive. Also, since these individual firm reports are subject to audit and verification, these statistics are accurate. The Federal milk order statistics database contains historical information, beginning in January 2000, generated by the administration of the Federal milk order program. Most of the information in the database has been published previously by the Market Information Branch in Dairy Programs either on its web site or in the Dairy Market News Report. New users are encouraged to use the "User Guide" to learn how to navigate the search screens. If you are interested in a description of the Federal milk order statistics program, or want current data, in ready made table form, use the "Current Information" link.

    Description

The global milk and dairy products market is a substantial and dynamic sector, exhibiting consistent growth driven by several key factors. Rising global population, increasing disposable incomes in developing economies, and a growing preference for convenient and nutritious food options are major contributors to market expansion. The shift towards healthier lifestyles fuels demand for dairy products perceived as beneficial for bone health and overall well-being. Furthermore, the expanding food service sector, particularly in quick-service restaurants and cafes, significantly contributes to increased consumption. Innovation in product offerings, such as the introduction of functional dairy products enriched with probiotics or vitamins, further enhances market appeal. While challenges exist, such as fluctuations in milk production due to climate change and increasing raw material costs, the market shows resilience and strong growth potential. Specific product segments like yogurt and cheese demonstrate particularly robust growth due to their versatility in culinary applications and perceived health benefits. E-commerce channels are also rapidly gaining traction, offering convenient purchasing options and expanding market reach, particularly in developed nations. Geographic variations in consumption patterns are evident, with developed nations exhibiting higher per capita consumption compared to developing regions where market growth is propelled by increasing affordability and awareness of dairy's nutritional value. Competition within the industry is fierce, with large multinational corporations alongside regional players vying for market share. Strategic partnerships, mergers and acquisitions, and a focus on sustainable practices are shaping the competitive landscape. The market segmentation reflects diverse consumer preferences and purchasing behaviors. Fluid milk remains a staple, but value-added products like yogurt, cheese, and ice cream are driving significant growth, reflecting consumer demand for variety and convenience. Different distribution channels cater to these diverse needs, with hypermarkets and supermarkets holding a considerable share, while the e-commerce segment is rapidly expanding. Regional differences in consumption patterns are significant, with North America and Europe holding substantial market shares. However, rapidly developing economies in Asia-Pacific and other regions present significant growth opportunities. Description

The global milk and butter market, encompassing retail and food service applications, is experiencing robust growth, driven by increasing consumer demand, particularly in developing economies with rising disposable incomes and changing dietary habits. The market's expansion is fueled by several key factors. Firstly, the growing popularity of dairy products as a crucial component of a balanced diet contributes significantly to increased consumption. Secondly, innovation within the dairy industry, including the development of novel products such as flavored milks and specialized butter blends, cater to evolving consumer preferences and expand market segments. Furthermore, the rise of health-conscious consumers is leading to increased demand for organic and specialized dairy products, creating lucrative niche markets. However, the market faces challenges such as fluctuating milk prices due to factors like climate change and feed costs, impacting profitability for producers. Furthermore, competition among major players like Nestle, Lactalis, and Danone is intense, necessitating strategic innovation and efficient supply chains to maintain market share. The market segmentation shows a considerable share allocated to milk-dairy products within both retail and food service channels, with butter holding a significant, albeit smaller, proportion. Regional variations in consumption patterns and market penetration are also observed, with North America and Europe currently holding major market shares, but significant growth potential is evident in Asia-Pacific regions like China and India. The forecast period (2025-2033) projects continued expansion of the milk and butter market, though the CAGR may vary based on evolving economic conditions, consumer preferences, and regulatory landscapes. Successful players will need to adapt to shifting demands by investing in sustainable sourcing, efficient production, and marketing strategies tailored to regional and demographic segments. Specific growth opportunities lie in exploring new product formats, expanding into emerging markets, and leveraging technological advancements to enhance product quality, shelf life, and traceability. Growth may also be fueled by strategic mergers and acquisitions, consolidating market power and allowing for greater investment in research and development, marketing, and distribution. Addressing sustainability concerns, including reducing carbon emissions and promoting animal welfare, will also be vital for long-term growth and consumer acceptance.

    Description

The global ultra-heat treated (UHT) full cream milk market is experiencing robust growth, driven by increasing consumer demand for convenient, shelf-stable dairy products. The market, valued at approximately $15 billion in 2025, is projected to exhibit a Compound Annual Growth Rate (CAGR) of 5% from 2025 to 2033. This growth is fueled by several key factors. The rising popularity of ready-to-drink beverages and the expanding use of UHT milk in food processing, particularly in the bakery and confectionery industries, are significant contributors. Furthermore, the increasing disposable incomes in emerging economies and the growing preference for convenient and nutritious food options are boosting market expansion. Different product segments like flavored whole milk are showing higher growth rates compared to pure whole milk, reflecting evolving consumer preferences for enhanced taste profiles. Major players like Nestlé, Lactalis, and Danone are leveraging innovation and strategic partnerships to strengthen their market positions, driving competition and further propelling growth. However, market expansion faces some challenges. Fluctuations in raw milk prices and the increasing awareness of the impact of saturated fats are potential restraints. Nevertheless, the introduction of new product variations, such as fortified UHT milk with added vitamins and minerals, is expected to mitigate these concerns and further stimulate market expansion. The shift towards healthier lifestyle choices and the growing emphasis on convenience continue to present a positive outlook for UHT full cream milk, particularly in developed and developing nations. Regional disparities are evident, with North America and Europe currently holding significant market shares, while Asia-Pacific is anticipated to display the highest growth potential owing to population growth and rising dairy consumption.
