The total milk production in the country amounted to over *** million metric tons during the same fiscal year. Diversified utilization of milk Over the years, the dairy industry has evolved to include a plethora of products. Butter, paneer (an Indian cheese), curd and yoghurt are the building blocks of the processed milk products industry in India. However, in the organized market, butter and cheese dominated the dairy market.
